Ah! thank you! so the Command Line Interface at least makes a little bit of sense and I can actually get things done. At least the CLI doesn't force me into some stupid canned way of organizing my files like the GUI does.
FWIW:
\Programs\...\ebook-convert \mydir\mysubdir\eebaum-wizardofoz.mobi \myoutdir\mysubdir\eebaum-wizardofoz.txt
or something like that should work.
