Check out TiReader. It has the best support for accessing Calibre as an OPDS server that I’ve used. Definitely allows sorting (or even searching) your Calibre Library via tags. I don’t know if it will connect as a wireless device but if you setup the Calibre server, you can definitely connect wirelessly on your phone/iPad that way.
