I might have misunderstood your question, but here is how I find and replace those symbols:
To find the < symbol, search for <.
To find the > symbol, search for >.
When viewing the symbols/letters/numbers in the Reports function, clicking on either the < or > will not find those symbols in any of the html files. You have to search for them, as I said above.
