Had a small bakery at one time - mostly artisan bread. My suggestion for cookies: Wilton 10x16 racks @ Walmart for $3.28 each and parchment paper 100 half sheets 12x16 @ King Arthur Flour for $20. The entire sheet of cookies can be slid from the pan onto the wire rack and *bonus* the parchment can be re-used several times before discarding. I use parchment and silicone mats for all my baking, makes clean-up so much easier than scrubbing pans!
