Because the distortion when going from 4:3 to 16:9 is a lot worse than that for book covers. And, in general, you aren't looking at the covers for anywhere near as long. And, it depends on the cover, the more abstract, the less likely for it to matter.

But, most importantly, because that is what they choose to do.
