You can't have Chapter name (header) or Book name (footer) without also having progress(page, % or time), nor have progress (page, % or time) without a prefix book or chapter name.
The very slim progress bar at the extreme bottom is a separate element that has on/off in the Reading Settings.
This is all controlled on page 2 of the reading settings.

Ok, found, but this is not evident.
Now, you can set the chapter progress by page number, percent read, time remaining, or off, this meaning you can hide the header.
You can also set the book progress in the same way than the chapter progress, this meaning you can hide the footer.
But in previous firmware versions, you had explicit voices to hide/show the header/footer, for old men as me please insert a readme.txt or whatsnew.txt file...
