I have the iPad Pro 9.7 inch with Apple Pencil and recently bought the Nova Pro 7.8. I have to say that the writing experience on the Nova Pro is closer to actual writing than the iPad for sure, however, it is definitely not like writing on an actual paper with pencil/pen. I have used a friend's reMarkable tablet to write and the experience there was probably the best of the three and the closest to writing on an actual paper.
So to answer your question, the Nova-Pro is definitely better for writing than the iPad Pro. Another thing to keep in mind is the width of the stylus that comes with the Nova Pro. It may or may not affect you. The stylus is thin and not quite the same size as a regular pen, so after prolonged writing, your fingers (or palm) might ache.
