On my touch hd 3, while reading a book in the built in reader, if I tap the options button (right most physical button, as opposed to the home, left page, or right page buttons), then select settings, then there are options for “page” which is margins, line spacing and hyphenation, another option for fonts, and to answer you question, a third option for “display”.

In display are three yes/no choices: pages, status bar, and built-in page numbering.

If I say no to pages and status bar, I get full screen of the book text.

I confirmed that preference persisted from book to book.

You can also tap middle of the screen for the options to show up, instead of the physical button.
