I'm not sure exactly what they will notice. Obviously they will notice the firmware level itself, but I am unsure if it is easy to tell a factory QC test version from a customer one. I seem to recall one report that there is a script to erase the QC software and leaving only the customer code, but I cannot vouch for this personally. If this is the case there is likely no easy way to detect the factory version other than looking for the QC software.
The problems with the 5.12.x firmware appear to be related to very aggressive attempts to check and upgrade firmware, thus airplane mode. There are even reports of it defeating current measures to block upgrades, but I am unsure this has been confirmed.
I believe the hotfix still works, but at least some 5.12.x versions appear to use the battery up quickly. So there is little reason to go to the 5.12.x level unless you need some of its newer features, which someone else will have to elaborate on.
If I am mistaken in any of this I trust it will be corrected by those here with a more accurate understanding of the current situation than I have.
