Stock may be unlimited but the distribution license isn't perpetual. I regret not getting David Eddings' Belgariad and Malloreon series as ebooks before as they don't seem to be available in the US now.

As for DRM Removal, Kindle for PC/Mac makes downloading your entire library to your PC relatively easy.
