In the native NeoReader app, just long press on a word and the dictionary will pop up. You can load any dictionary is StarDict format and it will work with the NeoReader app. You can have up to five preferred languages selected for lookup at any one time. However, you can have as many dictionaries as you like on the device.
I currently have nine dictionaries loaded onto the device. Depending on what language I am reading in, I will then change which of them I am using as my preferred dictionaries.
Because you can also install apps on the Onyx devices, you can then install other dictionary apps and other reading apps which can allow you even greater versatility for looking up words. For example, I find Moon+ Reader is especially good for Japanese. It offers even more lookup options than the native NeoReader.
