There is no perfect one-size-fits-all solution. MOBI is a format with several variants with different capabilities. Other Kindle formats also exist. It would help if you would share your goals.
Do you want to sideload to a Kindle via USB or would you like OTA delivery? Do you want your reading position, notes, highlights, and collection membership to be backed up and synced across multiple devices? Is seeing the correct cover image thumbnail on your device important to you? Do you want to take advantage of Enhanced Typesetting features? Anything else?
