Well, mainstream writing is an easy category to define: It's whatever doesn't clearly fit any of the classic genres.
If it's neither romance, western, horror, mystery, or SF&F it has to be *something*... Mainstream!
Beyond that, if the prose or metatext is more important than the story, then it's litfic.
