Those are not my use cases, but I understand your concerns. I have not synced anything using iTunes for a few years now.

Mine would be opening ePub or PDFs or .mobi or .docx files from external storage, which I assume would work the same as opening from cloud folder via sharing. So this is a plus for doing that.

What seems to be going away is ability to get content to 3rd party apps via iTunes. Unless that is supported by Finder somehow in Catalina: that would be ideal.
