Yes, they will continue working if plugged in. But, a little problem is the way the updating works. I happens when unplugged. But, I have a Touch with a completely dead battery. It cannot update because when I unplug it, just turns off.

I do have a USB gadget that sits in-line (one cable from the PC to it, another from the cable to the device). This has a button to trigger the disconnect or connect. I don't remember if it just interrupts the data, or does the power as well. If it is just the data, then this should work. It works well with the other ereaders, but I haven't tried the Touch with the dead battery.
