Any books you from Amazon Kindle will have DRM which means you can't put them on other devices or convert them to other formats. Other stores may use epub, but any store that offers commercial books for sale will also use DRM.

Calibre allows you to convert to and from any format if you get rid of the DRM. I'm not sure if we're allowed to talk about the specifics of how to get rid of DRM though. So I'll just say it is possible.
