It's not the first time. Page Flip was remotely turned on after being shipped, as well.
This is perfectly normal alpha/beta testing: you ship the code for both the old and new UI to everyone, then enable the new UI for an increasingly larger percentage of users as time goes by -- unless of course there is an explosion of support requests, in which case you revert it on an ever-increasing percentage of requests, reversing the process. Amazon ships out all their website (etc) changes this way, so it's not surprising to find them doing it for UI updates on their e-readers too. For the website/e-commerce changes, here isn't even any need for their developers to do anything: the increasing percentage as things work well and the falling percentage as things work badly is almost entirely automated. I suspect this is as well.
