For the few books I have that list multiple publishers, I use a custom column to hold them. In the case you showed, I would use Simon Rogers as the publisher in calibre's Publisher column and place the rest in the additional publishers custom column. Much the same as placing the editor (preferred) or at most, two authors in the author column for multi-author books or anthologies and the rest of the authors in a additional authors column. Admittedly, that authors bit is to keep filenames from getting munged to keep the length down.
