I used to use Penultimate + really cheap capacitive stylus for meeting notes and found it was OK as long as I did not lean my wrist/palm on the ipad (this was iPad 1). I guess it depends on the level of detail you'd want. Alas, Evernote owns Penultimate now and its just not the same as it was. My current stylus of choice is an Adonit Dash 3, which I find adequate for most situations. I still have a cheapo as well.

Of course, any stylus in use will behave according to the application it works in. Many have palm rejection built in.
