A deep philosophical question: if carrots were left out of a carrot cake, would anyone know the difference (except for the fact that they don't see any orangey slivers in the cake)?

I love cream cheese icing, icing that so often carrot cakes are topped with. But my fave has to be an Italian cream cake, if a cream cheese icing is used, followed closely by a red velvet cake . . . .
