Although I am no expert ...I use this setting for the 10.5" ipad pro:

size: 6.5in 8.5in;
margin: 5mm 5mm 5mm 7mm !important;
}

I like larger font sizes so I set the font to 1.4em and select a font that has a slightly heavier weight than regular.
This combination is perfect for the screen size. You can play around with the margin settings.

These settings are in the prince pdf stylesheet of the Prince sigil plugin that I use to convert to pdf.
There is also a calibre prince pdf plugin (windows) that allows you to adjust the settings, so you don't need to leave calibre to do the conversion.
