If you aren't having issues and are happy with the experience, you don't need to upgrade at all.
But I do quite like 4.12. I still miss the old tiled home screen you are still using on 3.11. But 4.12 makes things like searching on my old Aura much faster. Also, full screen reading is officially supported and no longer requires a patch.
There's likely a laundry list of changes between 3.11 and 4.12, but I don't remember most of them, to be honest.

Just download the firmware from geek1011's
site, unzip and then I just drop the KoboRoot.tgz file into the .kobo folder. When you eject your reader it should start the update on its own.
