I think easiest for me would just be to transfer my kobo database and remove all the links to kobo so it doesn't sync my books while still retaining my sideloaded books and reading stats but I am not sure how do to do that.

That isn't really practical. When you delete a purchased book, it removes the file and cover, does a lot of updating in the database on the device and updates the Kobo server with the status. There is probably a way to do this, but, it would need some investigation.
You can do multiple removes on the device. In the library, tap the menu in the top-right of the list and choose "Manage books". A dialog will open listing the books in the current list. Select the ones you want to remove then press "Remove" at the bottom. On the prompt, choose the "Remove from My Books" option and the books will be put in the archive.
You can also do this using the Kobo desktop application. If you have a lot of books to remove, this might be easier. After doing this, you will need to sync the device to remove them. Note, you actually need to remove the books twice. The first time removes the file, the second time moves them to the archive.
Another way would be to use two accounts. One to buy books from Kobo, and the other on the device. You would need to sideload the purchased books. You would also loose the reading stats when you signed out of the device to use the new account. This is probably the bet long-term solution. Or maybe remove all the existing books and start a new account for future purchases.
