The series info cannot be set when a book is first sent to the device. You need to let the device import the books and connect again. The series info will be updated then.

Collections can be set when the book is sent, but they are also maintained whenever the device is connected. https://wiki.mobileread.com/wiki/Kob...nd_Collections is a guide to configuring the collections. And uses series as an example.
