The format to convert from is specified via a button at the top left corner of the conversion dialogue, click it and you'll get a list of available formats.

The sticky regarding PDF conversions remains current because nothing has changed.

There are many, many threads here, and in the Epub and Workshop forums that discuss PDF conversions.

And the main factor that affects the treatment of images during conversion is the setting of Output Profile in Page Setup
