The prologue is definitely different than the individual Dragonflight. There's a single prologue for the whole omnibus instead of one for each book, and it looks like it was written for that purpose (it has more information about historical Pern than I remember from those).
White Dragon does have at least one of the sex scenes, which I would expect to be removed if it were altered for a school market. There was also a book club edition that had the same text as the original books, this may follow that.
(where did you get information about an altered school market version? I can't find anything in a google search)
