If you want to stop third party apps from auto updating, you could try going to the settings once you are in the Playstore and turning off the auto update function.

That's what I have done for a couple of old Android tablets I have. Otherwise many apps will update to the latest version and be unable to run on the ancient system firmware on the tablets.

I got tired of having to find old apks for apps and then sideload them onto the tablets. Since I turned off the auto update, I no longer need to do that.
