Select the books on you want to change the Author, tap 'E', and in Basic metadata->Author(s) field either type, or select from the drop down, the author name you want.

OR - if you want to change all the books by Donald Duck to Mickey Mouse, right click Donald Duck in the Tag browser (left sidebar), select Rename Donald Duck, and then type Mickey Mouse.
