At this point there isn't anything you can do. For purchased books, Kobo syncs the status to their server and will sync back after doing something like this. For sideloaded books, Kobo doesn't sync anything about the books to their servers.

If you want to prevent this in the future, there are a few things you can do. The simplest is that can backup the internal database and restore it after a mistake like this. There are some issues with this (books have to already be on the device), but it will work.

If you are interested in tracking your reading and you use calibre, you can use by Kobo Utilities plugin to store the reading status of the books when you connect the device. They can be restored later. This doesn't backup or restore the hours read. The plugin can also automate the database backup.
