It's carbonated water, created using a Soda Stream, with the salt content manipulated to a very close approximation of that in San Pellegrino. And the price is kept under control by using an adapter to allow clean paintball canisters to fit the Soda Stream. FWIW, there's a spreadsheet out there that has well over 200 different commercial carbonated (and still) waters that you can mimic. You plug in the starting point of your current water, and select the water you want to mimic, and it gives you the amounts of various salts to add. Quite ingenious, actually. And better than paying the extortionate price for San Pellegrino.
