Editing the metadata in Calibre does not change the eBook file in any way. Since you are manually copying then you get the eBook file without any metadata changes applied.

To get the metadata into the actual eBook file either use Calibre itself to load the eBook files onto the device (which updates metadata during the transfer), or alternatively run the Embed Metadata option against the books (you may have to edit the toolbars in Preferences to get that option on a toolbar).
