Sorry for the double post, just a quick update. After reading the converted pdf for a while I have realized that some rare (ie *very* few throughout the whole book) pages are blank, however this is not a problem because changing the text size causes them to show unlike the original (unconverted) pdf for which this didn't work (at least for me).
Thus, if you follow the above procedure for fixing blank pdfs and you end up finding the odd page still coming up blank, simply change the zoom option or text size (both seem to work) and the text should show.
