I don't know whether this alternative method will work for Spanish but it's what I did to get my favourite custom English dictionary added. I haven't updated to firmware 4.8.11073 yet but it works fine on 4.8.10956.

Try adding it like this:

-es-es | Espaņol - Espaņol | nothing special required
The Kobo already recognises the 'es' locale as Espaņol. If it works, you would end up with two entries in your dictionary drop-down menu:
Espaņol (the Kobo default Spanish)
Espaņol - Espaņol (your additional custom Spanish)
