@Tiggy626 one way would be to create a custom column called "Genre", then search Tags for your different genre values, e.g. "History", then use bulk metadata edit on those books to put "History" into the Genre column and remove it from the Tags column.

Then at the end of that process, search for books that don't have a value in Genre (i.e. Genre:false), go down the list and edit the Genre column to the appropriate value using the F2 key.

It may also be possible to use the Consolidate All Library Metadata plugin or regex functions in Bulk Metadata Search and Replace to do it all in one step. Perhaps some other responders might pick up on those possibilities.
