Yes, if your device is synced with Amazon then books will remain in their collections even if you remove them from your Oasis. You will be able to see them in the "All" view.

Only the oldest Kindle devices and the Kindle for PC/Mac apps do not support cloud collections.

Added: This applies to books downloaded to the Kindle online from Amazon, not those sideloaded via USB.
