I suspect the &, was a typo. Use & alone in the author field.

Author Sort: Jin, Hong Gang & Xu, De Bao & Hargett, James

If the Author field is correct, the Author Sort field should be correct when you click on the > after the Author field in Edit Metadata.

If you find issues with the author sort, you may have to go into Manage Authors by right clicking on Authors in the Tag Browser and then Manage Authors (useful when calibre has issues with complex author names such as L. Sprague de Camp where you want the author sort to be de Camp, L. Sprague and not Camp, L. Sprague de).
