AFAIK in the Windows version of calibre, doing what you did is permanent for all instances of the designated format, I'm surprised it would be any different for Linux.

Anyway, if you right-click a TXT link in any Book Details panel, you can add and edit Open With entries and they should stick. If not, there's a bug in the Linix edition of calibre.
