You can do it via the saved searches function. DO search for
title:~^A
this will give you all books with titles starting with A. Save the search, naming it "A". Repeat for all the letters. Now in the Tag browser you should have saved searches named A-Z you can use.
An alternative, slighlty harder method would be to use a template based custom column that displays only the first letter of the title.
