Now here is the thing. Texas is HUGE. There are several different types of Mexican food and menudo.
So are you saying you have eaten menudo at every Mexican restaurant & food truck and church in Texas?
There is not one recipe for menudo.
That would be like saying all chicken soup must be chicken breasts only.

Hmmm... I've seen menudo recipes with tripe, pork and pork liver (Filipino), intestines (small), hearts, brains, spleen... hmmm... is there pattern here? If even the nose to tail crew won't
serve eat it, you can use it in a menudo?
I guess San Antonio doesn't qualify as west Texas since one recipe I have is credited to a hispanic family from San Antonio uses honeycomb tripe. Though why you worry about directions in such a tiny area is beyond me.

1,327,920 square miles for where I was born (that's the territory, not the country) compared to a measly 268,820 square miles for Texas. The population there has boomed to ~77,000 as of the 2016 census.
