Now here is the thing. Texas is HUGE. There are several different types of Mexican food and menudo.
So are you saying you have eaten menudo at every Mexican restaurant & food truck and church in Texas?
There is not one recipe for menudo.
That would be like saying all chicken soup must be chicken breasts only.
