I've never noticed this in my own kepubs because I always remove all variants of space characters surrounding the m-dash character.
I don't know the answer to your question. Perhaps it's a quirk of the kepub rendering app with non-breaking-space when text is full-justified. Does the problem go away if you display the kepub with ragged-right (left justified)? Is it just nbsp with m-dash or do n-dash give the same problem?
