I have no problems moving files to or from my iPad. Dropbox works great, and iCloud also keeps stuff synced up well. I can make a document or spreadsheet on any of my iDevices, and access it on any of the others. Non-apple documents and files are easily moved around using Dropbox.

It is normal for storage on a 16gb to have 5gb or so not available to the end user. The 16 Fires have a bit over 5gb used by the os.

I'm hard pressed to think of anything I've needed to do on my ipad that I wasn't able to do.

I do pay $.99 per month for an extra 50gb of storage. But my iPad Pro, Mini 4, and 7+ all have more than 16gb on board storage. My husband uses my Apple account for his phone and older iPad, so we end up with a lot of photos between the two of us.

I don't use iTunes for anything.

Getting Calibre Companion fully synced up with my Lenovo AIO took some time the very first time I did it, now it it easy to keep it updated. I think I sent 100 books at a time.

I don't use any Fire tablets now, but I was a fan back when they were first released. It's been years since I've used an android tablet, but I never did like android. Once I used an iPhone fir the first time, a 4s, I never looked back. We still use the 4s when the grandkids are here to run some games they like.
