I guess a lot of this depends on what you mean by a page. Is a page the amount of text in a physical page in some certain edition of a paper book? If that's the case then pages are rigid and unchanging. Or is a page everything from the top of the screen to the bottom? If that, then pages change when you change fonts and margins.
That's why I like the way Moon+ does it. A page is what I see on the screen in front of me. If it says there are 14 pages left in the chapter there are 14 of what I'm looking at. When I turn the page there are always 13 pages left no matter what some paper book says.
Pages that are a fixed number of characters or a fixed number of words or are related to those in a paper book have little to do with what I'm reading in my device. Pages that relate to what I'm reading make more sense to me. And if I change the font the count changes. Totally rational, sensible and un-Wolfish.
