Unfortunately, the above directions don't work; Calibre doesn't perform the way I thought it would.
After converting from Mobi to epub, you have to open the Edit Metadata window and delete all of the versions of the book that have been created except for the epub version. Click OK and then open the conversion window and convert to AZW3. That'll provide the boldness slider.
