I have been trying the conversion from an EPUB file to KFX. So far I have been successfully converting it and I can see the file and open it on my Kindle Paperwhite but the file doesn't render any cover when I'm in the Library view.

BTW this plugin works just fine when all the conditions are met.
You need to add the ebook's ASIN in the metadata (the Ids field) before converting it, like this:

amazon:ASIN

After you've sent the book to your kindle, when you connect the device to the internet it should download the cover automatically.
