There *IS* a 3Qt version, but few recipes adapted to it. I'm single, and I have the 6Qt. I either make several days' left overs, or cook half recipes in another pot inside the pot. "Pot in pot" or PIP cooking. An old-school metal stand-mixer *small* size bowl is great. Goodwill has a ton of them - maybe the small survives because nobody used it! But metal is best.
I had been thinking of the 3qt, but I was afraid there wouldn't be recipes for it. It's only me and hubby and I used to cook larger amounts for me for lunch, but it's been quite a while since I have been able to eat much more than cereal for lunch. And hubby doesn't eat leftovers so large amounts wouldn't work for me. If you make half recipes, how do you calculate how long to cook those?

I would be interested in your recipe file if you have anything vegetarian in it. I eat eggs and dairy, so that might be easier than vegan recipes.
