Yes indeed. Already you can use the "monitor" in full mobility: if you use a Wi-Fi connection, and your BT keyboard, and touchscreen for pointing... By the way - in that case (and if you are into Windows), RDP (with aRDP client) is probably the solution for you.
If you want to put "the Internet" in between, yes that's what remote desktop is born for (more or less). Of course, each technology is more or less fitting: for VNC you want to use a more direct connection; RDP is very good in small networks; but for using your "monitor" in Tokyo while your server is in Stockholm you would want to use NX or TV (TeamViewer should be famous for that)...
