The document type is interpreted by Kindle software. changing it from one of the Amazon types would be a bad idea.
MOBI and KF8 formats can have arbitrary metadata added, but the Kindle software won't do anything with it.
The issue is not adding the metadata, but doing so in a way that the Kindle software can handle. Apart from author name, I'm not sure there's anything that works.
