It is part of the "Update metadata in Device Library" function. Select the books you want to updated, and select the option. About the middle of the dialog on the right is "Date Added". Select that, and then choose the date to be used from the drop-down to the right. Adjust the other options as needed and press the OK button.

Or were you meaning something else?
