Kindle for iOS does not support KF8 format and instead uses AZK, which is basically the same format as used by
Kindle Cloud Reader. Kindle Previewer can generate an AZK file to be sideloaded using iTunes.
ADDED: I agree with HarryT that the root cause is most likely the wrong character encoding being used for the apostrophe. If the OP is sideloading a dual-MOBI file then Kindle for iOS will use the old-MOBI part of the file while the other apps will use the KF8 portion.
